I cannot believe it’s already the 4th of July! I hate how fast this summer is going but I have enjoyed every single minute so far and can’t wait for the rest of July and August. We are typically in St. Louis for the 4th of July visiting family but not this year.
It was a hard decision not to make our yearly summer trip back since moving 10 years ago but with a little one running around we have really enjoyed exploring Minneapolis and doing fun things around the city. Today we enjoyed kayaking with our little guy and he loved it! I have to say I was kind of nervous at the idea (insert visual of your 2.5 year old jumping out of the kayak into the lake) but all went well and we will definitely be taking him out again.
I will miss being with family this year but we will be making our own memories here in Minneapolis. Our neighborhood is having their annual 4th of July get together which I’m excited to finally participate in. Word on the street is there will be a firetruck for the little ones to explore. I don’t think my little guy is going to know what to do with himself. I can’t wait to experience it with him. This year we are skipping out on fireworks which makes me sad but a well rested toddler is much more important.

If you are still scrambling to figure out what you want to make for dessert tonight I may just have the perfect thing. Berries With Lemon Thyme Coconut Whipped Cream! Sound good? Berries and coconut whip cream are one of my favorite sweet treats.
I wanted to kick up the interest of this basic dessert so I looked around my yard and realized my lemon thyme has almost doubled in size since I planted it. I figured it was time to use some. Lemon thyme has a bright lemony flavor. It is not at all bitter like regular thyme can be. You can use it for just about anything you would typically use lemon for.
If you can’t easily get your hands on it you can always substitute lemon zest along with some normal thyme or just lemon. If you love using fresh herbs as much as I do you can also add your favorite to the coconut whipped cream. Lavender and mint work great! Whatever you are doing today I hope it is filled with family, friends, healthy food and of course fun. Enjoy!
- 2 cans full fat coconut milk
- 1 package of strawberries
- 1 large package of blueberries
- 3 sprigs lemon thyme + 6 small spigs for garnish
- 2 Tbsp raw honey
- ¼ tsp vanilla extract
- Refrigerate can of coconut milk overnight and when you remove from the fridge flip the can upside down and open from the bottom. This makes it easy to separate the cream from the water.
- Remove the chilled coconut milk from the refrigerator, open and dump out the water. Only the hardened cream should be left in the can. Scoop the cream out and put it in a bowl.
- Wash lemon thyme, dry and pull each leaf off of 3 sprigs and add to the cream along with vanilla extract. Keep the remaining 6 for garnish.
- Place raw honey in a small bowl and heat until melted. 10 seconds at most will do.
- Pour melted honey into the coconut cream and mix all ingredients together until smooth and creamy.
- Wash strawberries and chop into desired size pieces.
- Wash blueberries.
- Assemble by placing a spoonful of strawberries in a cup, top with coconut cream, then blueberries then coconut cream and so on until you fill the cup to desired height. I used tall glasses but any size can be used. The smaller the glasses the more servings you will have.
- Garnish with a sprig of lemon thyme.
