H has been begging me to make lemon cookies! I made some last Christmas and they were his absolute favorite. I have tried to remember how I made them and have turned up empty-handed. So, I decided to create a new lemonish cookie this year. These Citrus Shortbread Cookies not only contain lemon but orange too! This citrus combo along with French butter is pure perfection! I used only lemon and orange but you could easily add lime and I can guarantee it would be a great addition. If you prefer to focus on just one citrus flavor then use the juice and zest of your favorite. You honestly can’t go wrong! I love recipes where you can customize to your liking and this one allows you to do just that. Also, you may be asking why French butter? Well, for a few reasons. It’s delish number one! But, the main reason is it is lectin free. So, if you are following a lectin free protocol be sure to use French butter. Otherwise, good old Kerry Gold or another pasture raised butter is perfect. To ensure a nice round shape scoop dough into your hands and roll in a ball. Then place on a cooking pan and use a fork to create the top texture and flatten slightly. You can also roll out the dough and cut into your desired shape or use cookie cutters. This method with give you a more crisp shortbread. Once cookies are out of the oven allow to cool and then give them a dusting of powered sweetener. These are sure to become a favorite! It took me awhile to come up with a name for these cookies. I was hoping for something better but I settled on Maple Butter Cookies. Not as exciting as I hoped but it works! Two of the main ingredients as you probably guessed are butter and maple syrup. There is only 1/2 cup of maple syrup for this recipe so while these cookies are not one hundred percent sugar free the sugar in them is coming from an unrefined, whole source. And, if you do the math there is only around 2 grams of sugar per cookie. Still low if you ask me! The maple syrup not only adds to the texture of these cookies but the flavor as well. If you want these to be Keto and one hundred percent sugar free you could swap out the maple syrup with something like Lakanto’s maple flavored sugar free monk fruit syrup. I personally like the idea of good old fashion maple syrup but you can make the call. These cookies are soft and so yummy! I mean you really can’t go wrong with butter and maple syrup can you? My favorite cookie as a kid and still my favorite today is a simple sugar cookie. These Almond Sugar Cookies are like the classic but with a touch of almond extract. They are the fastest to whip up of all the cookie recipes I’m sharing this week and are fail proof! Instead of butter or coconut oil, I chose sustainable palm shortening for the fat in these cookies. I wanted a neutral flavored fat so that the almond flavor could shine through. I also wanted a crisp yet, slightly soft sugar cookie. Palm shortening won among the other fats I tried hands down. When choosing palm shortening it’s important to ensure you are purchasing a brand that supports sustainable practices. If you purchase from Whole Foods, your local Co-Op or another health food type of store it’s probably a safe bet that you will find only brands that align. However, an easy way to be sure is to look for a stamp that says, “Rainforest Alliance Certified”. I am a fan of Nutiva or Spectrum. To top these cookies I chose to dip them in a granulated erythritol monk fruit blend. However, to make them more festive you could use sprinkles or even top with a little buttercream icing. To achieve the perfect edge and shape I used the following technique: Use a cookie scoop to scoop the dough into your hand. Then, roll the dough gently between your hands to create a ball. Next, dip one side in granulated sweetener and place on a cookie sheet. Use the back of a glass press and flatten the cookie to about 1/4″ thickness. The sweetener keeps the top of the cookie from sticking to the glass. If you find that it sticks just dip the bottom of the glass in granulated sweetener before pressing and flattenigh the cookie. Calling all CHOCOLATE LOVERS! It’s not Christmas without a little chocolate right? If you are a chocolate lover then you are going to love these Salted Triple Chocolate Cookies. They contain 100% cacao chocolate, cacao powder, and cacao nibs which I like to call nature’s chocolate chips! I consider chocolate a health food. However, it’s important to make sure the dark chocolate you select is not filled with additives like milk, soy lecithin and a lot of sugar. If you want these cookies to be completely sugar free then select a 100% cacao bar. To go light on the sugar I recommend 72% or lower. The higher the percent of cacao the better! You might be asking what is so great about chocolate. Well, let me tell you! Chocolate is overflowing with antioxidants, minerals, and healthy fats. With 3 sources of high-quality chocolate, these cookies really pack a nutrient punch. In addition, they have a small sprinkle of Maldon sea salt on top. Any salt can be used but Maldon looks beautiful and is the perfect contrast against the dark brown color of these cookies. It also gives a little crunch. These cookies are Lectin Free, Gluten Free, Grain Free, and Keto. After baking a few batches I found that if you prefer a flatter less crumbly cookie you should slightly flatten these before baking. They will spread a bit so don’t flatten too much. Just a touch seems to be perfect. If you like a more crumbly, puffier cookie then just scoop onto your cookie sheet, top with salt and pop in the oven. I hope you enjoy these as much as I do! Halloween has passed and it’s officially Christmas cookie season (well at least at my house)! Technically these are not cookies however, they sure do taste like a cookie. And, they would make the perfect addition to your holiday cookie platter. The base of these Nutty Hemp Collagen Bites is my new favorite nut butter called NuttZo. It’s a mix of cashews, almonds, brazil nuts, flax seeds, chia seeds, hazelnuts, and pumpkin seeds. And, it is seriously delish! I have been purchasing it at Costco but have seen it at Whole Foods and local co-ops as well. Of course, Amazon has it too. I mean what don’t they have? If you can’t find Nuttzo or if you prefer something different any nut or seed butter can be used and will work perfectly. In addition to nut butter, these bites contain collagen and hemp seeds. They are filled with both protein and healthy fats making them the perfect snack! I love using hemp seeds in recipes and tossing them on just about everything. Not only do they have a yummy nutty flavor but they are the perfect balance of essential fatty acids, linoleic (omega-6) and alpha-linolenic acid (omega-3). In addition, they are a great source of vitamins and minerals. These bites can be kept at room temperature but I recommend popping them in the fridge or freezer.
